A customer came and bought an item from me and paid for it but did not take item and said he will take it at another time when comes back this side, so I took the item and kept it for him, however he did not mention when he is going to come fetch it, but after few weeks I ran out of stock and my stock was arriving in the same week so I thought let me sell it and when the new stock arrives I'll keep that same item for him....is it correct what I did and if when the customer comes back and does not have a problem with what I did will this be so fine.

What you had done was not permissible. The item you had kept was an Amaanat.
You had no right to sell it with the intention of replacing it with new stock. Regardless of the new stock being of the same kind/quality, it was haraam to have violated the Amaanat. You must clarify this act to the customer so that the sin may be effaced. Also Taubah is necessary.
